Avocado Salsa

Please tell me I’m not alone in having a difficult time when spelling a-v-ooooooo-c-a-d-o….. I always want to use an ‘a’ where that first ‘o’ should be…. spell check won’t let me though… I guess that’s a good thing… makes me look smart at least…!

Today I bring you the goodness that is Avocado Salsa…!

Mmmmm….

See it’s not all crafts and design over here…sometimes we eat….! And sometimes I cook! Well, technically this isn’t cooking…but whatever…!

Still… It’s good and easy… just trust me…!

When we needed more variety in our menu, this salsa fit the bill. I admit I tweaked the original recipe that I found here…. (the name was a coincidence…! I just took it as a sign that I should try it..!)

Our version as it stands now consists of this:

1/2 can of black beans (rinsed and drained)

1 can diced tomatoes- garlic, basil & oregano flavored or plain (drained and coarsely chopped)

1/2 avocado (diced- you can use the whole if you feel so moved… this is just what my guys preferred)

1/4 cup chopped onion- (red or yellow- both rock!)

2-3 cloves garlic- minced

1/8 cup lemon juice

3 Tbsp dried cilantro

drizzle of olive oil

{these quantities combined make around 3 cups of salsa.. give or take}

Take your favorite salsa bowl (mine would be as big as a trough…because I could eat this stuff every.single.day…!)

Combine all the ingredients, mix together and ::poof:: you’re done! Grab your tortilla chips and get to munching!

….now that I’ve made myself hungry I’m off to see what’s left of this in the fridge…!
